Add appropriate amount of salt to the minced meat, 2 quail eggs, light soy sauce, and starch and stir until strong.

Cut the bitter melon into 2 cm thick rings, remove the seeds, sprinkle with a little salt and marinate for about half an hour. Stuff the stirred minced meat into the bitter gourd ring, filling it only half full.

Crack the quail eggs into the bitter gourd ring.

Boil water in a pot and add bitter melon and quail eggs.

Steam over high heat for 7 to 8 minutes.

While steaming the eggs, prepare the gravy. Add light soy sauce, oyster sauce, and starch into a small bowl of water and mix evenly.

Heat oil in another pot, sauté garlic until fragrant, pour in gravy and turn off heat until thickened.

Pour the gravy over the surface of the bitter melon and quail eggs.
