Peel and cut the potatoes into cubes, cut the tofu into cubes, devein the shrimps, and slice the fried ginger and set aside.

Heat oil in a pan and add fresh shrimps.

When the shrimp bodies are fried red, add the green onion and ginger slices, stir-fry until the shrimps are cooked, remove and set aside.

Then add potato cubes to the pot and stir-fry.

Add tofu, light soy sauce and salt to taste.

Add enough water to simmer.
