Prepare 10 grams of brine and 100 grams of water

Start cooking the soy milk. There will be a lot of foam in the soy milk at the beginning. Don’t rush and cook it patiently. The foam will disappear after about five minutes of boiling

After cooking, let the soy milk taste between 80 and 90 degrees before ordering tofu

Ladle the brine and gently pour it into the soy milk

The soy milk slowly condenses into lumps

Gently put the unformed tofu into the mold

Wrap the tofu in cloth

Cover the lid and put a heavy object on it for ten minutes. If you like older tofu, just increase the weight and take it out after ten to twenty minutes
