Taiwanese Braised Pork Rice
Overview
Braised pork rice is actually a specialty of Taiwan. The authentic braised pork rice is cooked for a long time, added with mushrooms, and eaten with a bowl of hot rice. It is fragrant and delicious, sweet but not greasy. When you are in a bad mood, having a bowl will definitely bring you happiness. When you're lazy, you can cook a big pot of braised pork rice and noodles. It's absolutely ok. Dice onions and mushrooms (soaked), wash the pork belly, absorb excess water with kitchen paper, and cut into dices.

After the pan is hot, add oil, then add diced onions, fry over medium-low heat until golden brown, remove and drain the oil to make a scallion pancake, and reserve the scallion oil for later use.

Pour the pork belly into the onion oil and fry until the surface is golden. Put the pork belly directly into the pot and slowly stir-fry out the excess fat over low heat.

Add the minced onions and ginger, add the diced mushrooms and stir-fry until fragrant.

Pour in 3 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce and 2 tablespoons of cooking wine and stir-fry until coloured.

Add the hard-boiled eggs and onion cakes, add the mushroom soaking water to cover the ingredients, add star anise, bay leaves, rock sugar, and salt and cook over high heat.

Stew for about 40 minutes until the pork belly becomes soft and tender. Finally, use high heat to reduce the juice, and stir-fry until thickened.

Boil water in a pot, add a few drops of cooking oil to the water, blanch the vegetables, remove and set aside.

Finally, place the blanched vegetables on the rice, cut the braised eggs in half, and top with the braised pork.
