Grilled Eggplant with Minced Pork

Wash two eggplants.

The garlic cloves need to be prepared a little more.

Press the garlic cloves into minced garlic.

Chop the minced meat.

Put the eggplant in the pan without adding oil.

When one side of the kang is good, turn it over and continue.

Heat oil in another pan and add minced meat.

Sauté minced meat until fragrant.

Add minced garlic and stir-fry.

Add salt and soy sauce to taste.

Add cumin powder.

Add paprika.

Stir evenly and remove from the pan.

Turn over frequently to heat evenly (it doesn’t matter if the outside is burnt, we don’t eat the eggplant skin)

Wait until the eggplant is ripe.

Use a spatula to peel the eggplant skin.

Add the fried minced pork sauce and spread evenly.

Sprinkle with chopped green onion and serve.

Remove from pot and plate.
