  1. Tear off the fat from the fat intestines you bought, rub them with flour, rinse them with water, then rinse them with vinegar, then rinse them under the tap, put them into a pot with a mixture of light and dark soy sauce, add a green onion, a handful of peppercorns, and brine and simmer for about an hour. (After the high fire boils, reduce to low heat)

  2. Cut the marinated sausage into small pieces.

  3. Cut green and red peppers and green onions into small pieces.

  4. Heat up the pan, stir-fry some of the cut fat intestines with some oil, then add the green onions and ginger shreds, pour in the cooking wine and stir-fry.

  5. Add green and red peppers and stir-fry until raw, then pour in the remaining light soy sauce, continue to stir-fry for another minute or two, turn off the heat and serve on a plate.
