Put oatmeal, caster sugar, brown sugar, and coconut into a large bowl.

Mix the low-gluten flour and baking soda and sift into a large bowl.

Mix the sifted flour, oatmeal, coconut, etc. thoroughly evenly.

Cut the butter into small pieces and heat until it becomes liquid. Pour the honey into the butter and stir evenly.

Pour the mixed dry ingredients into the butter and mix well with a spatula to form biscuit batter. The batter may be dry and loose.

Line a baking sheet with greaseproof paper. Grab a small piece of batter with your hands, shape it into a ball, flatten it and place it on the baking sheet.

Shape all the cookie dough and place it on the baking sheet.

Place the baking sheet into the upper middle of a preheated 190°C oven and bake for about 20 minutes, until the surface is deep golden brown and take it out.
