Eggplant with minced meat
Overview
The best taste is the minced eggplant made by my mother. The fragrant eggplant always tastes better than meat and is a must-have every time you go home. Now I have learned how to do it by myself when I am greedy. Eggplants made in many ways require frying in oil. They taste delicious, but they will feel greasy after eating. This way it tastes very delicious and not greasy.

Stir-fry the minced meat, whip until fragrant and add onions, ginger and garlic. Pour in light soy sauce and dark soy sauce. Continue to stir-fry.

Fry the moisture from the eggplant, stir-fry without adding water until the eggplant is soft. After the eggplant is soft, add 50g of water and sugar. Reduce heat to simmer.
