Whether braised duck is delicious or not, duck is very important. Generally, I would choose mallard duck, which is more fragrant. After buying the duck, clean it first.

Boil the prepared duck. When cooking, open the lid and use a little more water to basically cover the duck. Boil for about a minute, turn off the heat, and wash the duck again.

Put the washed duck into the pot, add water, add ginger and star anise, bring to a boil and add cooking wine. Cook over high heat for about 5 minutes, then continue to cook over medium heat for about 30-40 minutes. Be careful not to boil the water dry, leaving about half of it. The duck is almost done at this point.

Add dark soy sauce and light soy sauce, rinse the duck

After about 10 minutes, add the orange peel and pour the soup over the duck continuously to ensure even coloring.

After 5 minutes, add rock sugar and pour the soup over the duck.

Slowly reduce the soup, reduce the heat appropriately, pour continuously, and turn the duck appropriately.

When the soup becomes thick and becomes a sauce, reduce the heat to low.

When there is about half a bowl of sauce left, turn off the heat and take the duck out.

After cooling, cut the duck. Paired with the sauce, the strong orange aroma comes to your nostrils.
