  1. After heating and defrosting the Hokkien Po-roasted eel, cut into small pieces and set aside.

  2. Cut the carrots into small cubes and blanch them together with the corn kernels and green beans.

  3. Heat oil in a pan, add ginger and garlic and sauté until fragrant.

  4. Break up the eggs and stir-fry until solid. Dish out.

  5. Add diced carrots, corn kernels, green beans, add appropriate amount of salt and stir-fry.

  6. Add rice, add light soy sauce and stir-fry evenly.
