Eel fried rice
Overview
Kabayaki eel can always be associated with staple food. Even if it is not the classic eel rice in Japanese cuisine, it can be paired with staple food in various forms. After all, this sauce, this sweetness, it would be a shame not to use it with rice!

After heating and defrosting the Hokkien Po-roasted eel, cut into small pieces and set aside.

Cut the carrots into small cubes and blanch them together with the corn kernels and green beans.

Heat oil in a pan, add ginger and garlic and sauté until fragrant.

Break up the eggs and stir-fry until solid. Dish out.

Add diced carrots, corn kernels, green beans, add appropriate amount of salt and stir-fry.

Add rice, add light soy sauce and stir-fry evenly.

Add diced eels and eggs to the pan, stir-fry evenly and sprinkle with a handful of chopped green onions before serving.
