How to make puffs (make puffs in the oven)
Overview
Puffs are a Western-style dessert originating from Italy. The fluffy and porous cream dough is filled with cream, chocolate and even ice cream. Today we choose custard sauce.

Prepare required materials

Make the custard filling: first beat the egg yolks and sugar

Add milk gradually and mix well

Then sift in the flour and mix well

After the batter is heated, stir continuously until it becomes thick, then remove from the water and let cool

Make puff pastry: cut the butter into small pieces, add water, heat over medium heat and bring to a boil

Remove from heat, add flour and mix well to form a paste

Cool the batter to 60 degrees and add the whole egg liquid in three batches

Put it into a piping bag and pipe it onto the baking sheet

Preheat the oven to 200°C for 3 minutes. After baking for 20 minutes, turn to 180 degrees and bake for another 5 minutes until golden brown

Let the puffs cool and then squeeze in the custard filling
