Wash the ribs with water and set aside.

Put a small amount of oil and ginger slices in the pot.

After stir-frying the pork ribs over high heat, use medium to low heat to pop out the oil in the pork ribs.

Observe that the ribs are slightly golden, and use chopsticks to remove the ribs.

Pour out the remaining oil in the pot and lightly clean the residue in the pot.

Pour white vinegar into the pot, add brown sugar and heat.

Pour in the ribs and check that the amount of sweet and sour sauce can cover the ribs.

Cover the pot and simmer the sweet and sour sauce over medium-low heat.

When the pot is covered to braise the ribs, mix the cornstarch with half a bowl of water.

Check that the sweet and sour sauce is slightly absorbed by the pork ribs, add an appropriate amount of light soy sauce and salt, and stir-fry appropriately.

Pour half a bowl of cornstarch juice dissolved in water into the pot.

Stir over high heat to reduce the juice.
