I bought whole wheat flour and haven't made it yet. I tried it during my break yesterday and mixed a certain proportion of high flour. Next time I will use all whole wheat flour to make real whole wheat bread.

Arrange the dough and cover it with a plastic bag to ferment.

Dip your finger in flour and poke holes in the fermented dough. Just make sure it doesn't shrink (or shrink slightly) and collapse (collapse means it has risen)

Press and deflate, then divide the dough into 6 pieces of about 80 grams and roll them into balls (no need to relax)

Place on a baking sheet and cover with a plastic bag for secondary fermentation.

The surface of the fermented bread dough is smooth and does not stick to your hands, and it will rebound slowly when pressed with your hands.

Preheat the oven in advance to 160℃ for about 20 minutes (time and temperature are for reference only)
