Wash and chop half a chicken into pieces, blanch it in a pot under cold water

After blanching, take out the water and set aside

Wash and slice mushrooms

Cut onions into sections, slice ginger, a dozen peppercorns, 2 bay leaves, 2 star anise, 4 garlic cloves, 4 dried chili peppers

Add the blanched chicken pieces to the pan and stir-fry

When the chicken fat is simmered out, add all the seasonings above and stir-fry

Add oyster sauce and continue to stir-fry

Heat water and add appropriate amount of soy sauce to enhance color
