Thin Crust Chive Pie
Overview
I made the leek pie for my parents today, and it was well received. Chive pancake is a delicacy made with leeks, eggs, and noodles as the main ingredients. It is a very popular traditional snack in Shandong, Henan, Hebei, Shanxi, Shaanxi, and Northeastern provinces in northern China. It is also a festival food in some areas. Generally, fresh leeks, dried shrimps (shrimp skin), and eggs are used as the main raw materials. The skin of the leek box is golden and crispy, and the filling of the leek is crispy and tender. It has a beautiful taste and is a perfect snack at the right time.

Pour boiling water (about 90°) into the flour, and add the water little by little. Different flours have different absorption properties, and there may be deviations.

Add water and stir until it becomes fluffy, then knead.

Knead into a soft and smooth dough, cover with a cloth and set aside while preparing the filling.

Chop the leeks, chop the shrimp skin, beat the eggs and set aside.

Add a little oil to the pot, beat in the egg liquid and spread it into an egg pancake, stir-fry and set.

Put leeks, eggs and dried shrimps in a basin, add salt, light soy sauce and oil.

Mix well and the filling is ready.

Divide the dough into 10 evenly sized portions.

Take a piece and roll it into a pancake, make sure it is thinner.

Add the filling, wrap it up like a bun, and pinch the mouth tightly.

Pinch the mouth downward and press slightly to flatten.

I cooked them one by one and made 4 leek boxes.

Preheat the electric baking pan, brush the bottom with a layer of oil, put the pie in, brush the top surface of the pie with a layer of oil, and close the lid.
