Dice the tomatoes, shred the fungus, chop the green onions, and beat the eggs.

Boil the water in the pot, add the enoki mushrooms and blanch the fungus. It can take less than 1 minute, and it won’t take too long.

Pour it into cold water.

Add oil, add chopped green onions and sauté until fragrant.

Add diced tomatoes and stir-fry evenly.

Add appropriate amount of water and bring to a boil over high heat. Then add enoki mushrooms and fungus.

After boiling again, add appropriate amount of salt and light soy sauce and then add the beaten eggs.

Stir evenly and remove from the pot.
