  6. At the end of fermentation, brush the surface with egg wash and squeeze the cheese filling into the petals.

  7. Place in an oven preheated to 180°C, with the middle and lower racks on top and bottom, for 40 minutes. Immediately after taking out of the oven, remove from the mold and transfer to a baking sheet to cool.
