It is said that spring pancakes are eaten at the beginning of spring, but as long as you like to eat them, you can make them anytime. In my hometown, there are spring cake shops everywhere. One of the noodles my mother makes most often is the side dishes. The side dishes can be vegetarian or meat. The most popular ones are shredded fish-flavored pork, shredded potatoes, and pickled cabbage powder. The side dishes my mother makes are very simple, stir-fried long bean sprouts and stir-fried leeks. Spring cakes can be steamed or baked. Today we are going to bake them.

Boil the noodles with boiling water and let sit for 30 minutes.
