Wash the ribs and soak them in boiling water, then drain the water. Add cornstarch, cooking wine, soy sauce, and water to cover the ribs, stir evenly, and marinate for ten minutes. Soak the mushrooms in boiling water until soft (about five or six minutes), cut in half and set aside. Dice garlic and set aside.

Wash the garlic (thick garlic) and cut into strips and set aside.

Heat oil in the pot, add garlic and stir-fry until slightly yellow, add mushrooms and stir-fry until yellow, add spareribs (do not pour out the marinated soup, keep it for later use), stir-fry constantly (if the pot is too dry, add water along the edge of the pot), add an appropriate amount of soy sauce, stir-fry until it is about 70 to 80% cooked, add garlic and stir-fry for a minute or two.

Add water to cover the ribs, simmer over high heat until one-third of the soup remains, pour in the prepared water starch, stir-fry until almost the soup remains (according to personal preference), turn off the heat and serve on a plate.
