Mutton pilaf
Overview
My husband has always missed Xinjiang hand-picked rice, and he just happened to get a prize of mutton at the event. My husband also specially found an authentic hand-picked rice recipe for me to learn. Unfortunately, some of the ingredients were not available, but the taste was close. The fragrant hand-picked rice is so delicious.

Cut the mutton into pieces and boil it in cold water to remove the foam and take it out

Cut carrots and onions into thin strips

Put a little oil in the pot and stir-fry the mutton until it changes color

Add onions and stir-fry until fragrant

Add carrots and stir-fry, add salt

Add boiling water to cover the ingredients and bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes

First take out the mutton and other ingredients and put them into the rice cooker

Then put the washed rice on top

Then pour in the mutton soup. The amount of soup depends on the water absorption of the rice. Don’t make it too wet

Boil water to cook the rice. After the cooking is completed, stir the rice and ingredients and simmer for another 15 minutes
