Stir-fried raw sausage with chili and perilla
Overview
The difference between raw intestines and other pig intestines is that it is crispy. Personally, it feels like eating pig belly, or even crispier than pork belly. And it’s generally hard to buy.

Pig intestines.

All ingredients.

Wash the pig intestines and blanch them.

After blanching, wash again and slice into pieces, drain the water and set aside.

Cut all ingredients and set aside.

Heat oil in a pan, add garlic, ginger and shallots and sauté until fragrant.

Then pour the raw intestines into the stir-fry and add appropriate amount of rice wine.

Then add the chilies and add appropriate amount of water and simmer for a few minutes.

Finally add oyster sauce, salt, soy sauce to taste, and sprinkle with green onions.
