Cold Scallion Oil and Shredded Bamboo Shoots

Peel the bamboo shoots, wash and cut into shreds.

After the oil is hot, add chives, Sichuan peppercorns, and dried red pepper to make scallion oil.

Fry until the scallions turn brown and remove all the solids, leaving the oil for later use

Pour 15ML of cold vinegar and 15ML of white sauce into the shredded bamboo shoots.

Pour 15ML of scallion oil.

Add 1 tsp sugar.

Add 1/4 tsp salt.

Mix all the above ingredients and serve immediately.
