Stir-fried cowpeas with eggplant

  1. Prepare eggplant and cowpeas, wash them

  2. Cut the eggplant into hob pieces and soak in salt water

  3. Boil the cowpeas in boiling water for 8 minutes, being careful not to overcook them

  4. Drain the water from the eggplant and cowpea, heat the pan, add the onion, ginger and garlic segments, wait until the garlic turns slightly brown, add the eggplant and stir-fry

  5. When the eggplant skin changes color and the flesh turns yellow, add the cowpeas. After overturning, add appropriate amount of soy sauce, oil and sugar in order, the ratio is 2:1:1

  6. Stir well until the eggplant and cowpea are cooked and the flavor is absorbed, then you can put it on the plate.
