Overview
I bought a box of Yunnan high-mountain red potatoes. They were very fresh and quite big. I just wanted to make a snack for my girl!

Wash the red potatoes and peel off the skin.

First cut it into 0.5 cm slices, and then use a tool to cut it into thin strips shaped like wolf teeth.

After cutting, rinse several times in clean water to remove excess starch.

Bring water to a boil in the pot, add a little salt, soak the washed potato strips, and cook for 2-3 minutes.

Pour into cold water and cool. You can turn on the running water to cool down quickly.

Drain the water and blot with the help of kitchen paper by pressing lightly. Pour in cornstarch and shake the pot to coat each potato strip evenly.

Pack and freeze in the refrigerator for more than 3 hours. I divided two bags and made more at one time. I can use the other bag next time. It’s very convenient to take as you go.

Heat the oil in the pot to 60-70% heat, add the potato strips and fry over high heat for about 6 minutes.

When the surface is slightly yellow, remove and control the oil. The oil temperature in the pot will rise again. Pour in the potato strips and fry again. Remove and control the oil when they turn golden brown.

Make one plate plain and eat it with tomato sauce.
