Vegetarian fried yam
Overview
Yams can be stewed or roasted, but I prefer to simply stir-fry them. They are so crunchy and delicious.

Cut the yam into strips, rinse and soak in water.

Put vegetable oil in a pot and stir-fry crushed red pepper until fragrant.

Pour in the drained yam and stir-fry the red pepper over high heat.

Add salt

Add dark soy sauce, light soy sauce, and balsamic vinegar and mix well.

Sprinkle with chopped green onion and serve

Simple is delicious.
