Wash the chicken feet, blanch them in boiling water and set aside.

Add oil to the wok, add rock sugar when the oil is hot, and simmer over low heat until the rock sugar bubbles.

Add the chicken feet and stir-fry, immediately add hot water, add ginger slices, soy sauce, and cooking wine, bring to a boil over high heat, and simmer over medium-low heat.

Simmer for about twenty minutes. When one-third of the soup is left, turn up the heat and stir constantly to reduce the juice.

Simmer until the soup is thick and then turn off the heat.
