Weifang single cake
Overview
There is a delicacy in Weifang in my hometown called Chaotian hot pot. In the pot, pig offal, meatballs, dried tofu, etc. are cooked. The soup is boiling and the meat is tender. Customers sit around the pot, and the chef in charge of the pot ladles the hot soup, adds some coriander, soy sauce, etc., and prepares thin noodles for self-use. Chop the intestines, tripe, etc., put them on the cake, sprinkle with fine salt, roll them into a fire tube shape, and enjoy. All kinds of meat and vegetables cooked in Chaotian hot pot need to be wrapped in a single cake before they can be eaten. Only when rolled and eaten with this single cake, can the unique rich and thick taste of Chaotian hotpot be tasted. This single cake is actually a very common thin noodle cake in Weifang. There are many ways to make single cakes, including single-layer and double-layer cakes. The most technical one is the three-layer cake. There is oil between the layers, so it is easy to peel off. After peeling off, the cake is as thin as cicada wings, and it is soft and chewy in the mouth.

Pour 500g wheat flour into the basin, pour in boiling water and combine 1/2 of the flour into hot noodles.

Knead the dough into a ball and press it flat, then use a brush to apply a layer of peanut oil on one side of the dough.

Place the rolled pancake into the preheated pan.

Continue to heat the pan, and when the pancake is puffy, turn the pancake over and continue cooking.
