Wash and drain Macrobrachium and set aside

Heat the oil in the pot, add the macrobrachium, and immediately cover the pot (to prevent oil from splashing out)

After 30 seconds, open the lid and continue to stir-fry. Add ginger, garlic, sugar, soy sauce and vinegar and stir-fry again
