Yunnan thin bean flour
Overview
Thin bean flour is a good product for Yunnan summer consumption. It is made from fine white peas ground into powder and cooked into a porridge shape. Thin soybean powder is very refreshing and has the effect of clearing away heat. It is a specialty of Huize, Yunnan. Thin soybean flour is made from ground peas, a bit like northern polenta, but the thin soybean flour is formulated to make it salty. I made it once using pea flour from Yunnan and it tasted good.

Take 50 grams of pea flour and put it into a container

Add 100 grams of water to make a paste

Pour the remaining 450 grams of water and 2 grams of salt into a small pot

Bring to a boil over low heat until the water begins to boil. Pour in the batter; stir while stirring

During the cooking process, be sure to stir constantly and cook for about 10-15 minutes

The cooked paste is in this state. It won’t work if it’s too thick, or it won’t work if it’s too thin

Pour into a bowl

Add light soy sauce, beef chili sauce, sprinkle with coriander, mix well and drink
