Peel and remove the shells from the fresh shrimps.

Use a plastic bag to put the starch and flour in a 1:1 ratio to ensure your hands don't get dirty.

Heat the oil pan, put wooden chopsticks under the oil pan and when dense small bubbles will appear, throw the shrimp balls into the oil pan one by one. This will take about seven seconds to fry for the first time.

Remove all the shrimp balls, bring the oil to a new temperature, then pour in the shrimp balls for the second re-frying. Take them out after about three to five seconds. At this time, the shrimp balls will be golden brown and the skin will be crispy.

Mix the salad dressing and mustard together. Stir first so that they are evenly blended. What I put here is three spoons of salad dressing and two and a half centimeters of mustard.
