A classic home-cooked dish that you’ll never get tired of - Spicy and Sour Potato Shreds
Overview
Fried shredded potatoes are a favorite of my family. Mommy likes to add shiitake mushrooms, ribs or chives to stir-fry, but I like to add some chili pepper and vinegar to stir-fry it, turning it into hot and sour shredded potatoes. I like to eat hot and sour shredded potatoes. I can eat a large portion for one person. I never get tired of eating it!

Peel and wash the potatoes first and set aside

Then cut the knife into thin slices of about 1 to 2 mm

Cut them all into thin strips and rinse the potatoes with water to remove the starch

Then soak in water for about 20 minutes

Cut dry red pepper into small pieces with scissors and soak in warm water for about 10 minutes

Wash the green peppers and cut into shreds and set aside

Drain the soaked potato shreds

Heat the oil pan

First add the red pepper and burst it

Add the shredded potatoes and stir-fry for a while

Take a clean small bowl and add sugar

Pour in an appropriate amount of white vinegar, stir evenly and set aside

Add appropriate amount of salt and stir-fry evenly

Add a little and stir-fry evenly

Then add shredded green pepper and stir-fry for a while

Add the vinegar water you just prepared

Stir-fry until the flavor is infused and then turn off the heat
