Grilled Eggplant with Minced Pork

Besides salted fish and eggplant stew, this is probably my second favorite way to eat eggplant.

Material;

Wash the eggplants, brush with olive oil and put in the oven;

Preheat the oven to 200 degrees and bake the eggplant for 20 minutes on top and bottom heat;

Mince garlic; mince green onion;

Add appropriate amount of soy sauce and salt to the meat and stir evenly;

Heat some oil in a pan, add minced garlic and saute until fragrant;

Add minced meat and stir-fry;
-
Then add chopped pepper and minced green onion and stir-fry evenly;

Grilled eggplant;

Put the fried minced meat into the eggplant;

Bake in the oven at 200 degrees for 5 minutes;

Just sprinkle some chopped green onion at the end.
