Chop onions, ginger, cucumbers and carrots and set aside

Remove the heads and shells of the shrimp, open the back and remove the sand line and set aside

Dip Japanese tofu into dry starch and set aside

Deep-fry Japanese tofu in a pan to remove the hard shell and set aside

Heat the pan with cold oil and sauté the onion and ginger until fragrant, add the shrimp and carrot slices and stir-fry, add a small amount of salt, sugar and cooking wine, then add a small amount of water and simmer for 2 minutes

Before serving, add fried Japanese tofu with cucumber to thicken the sauce
