One loofah, peeled (I didn’t peel it intentionally)

Cut the loofah into hob pieces

Chopped garlic cloves and minced ginger (some people don’t like ginger, so they cut it into cubes)

I knocked the eggs into the bowl first

Add a small amount of salt to the eggs, then beat into egg liquid

Pour oil into the pot, and when the oil is hot, pour in the egg liquid

Use a spoon to cut the eggs into chunks

Serve it out (I like the fresh scrambled eggs the most)

Pour oil into the pot again, heat the oil, stir-fry the garlic and ginger

Pour the cut loofah into the pot, stir-fry, and add salt

When the loofah is ripe, pour in the scrambled eggs, and then add a little water (a little water, a little water is enough)

Then let the loofah and eggs roll freely in the pot for two minutes, then remove from the pot
