Hot soup hand-made noodles
Overview
In spring, I crave this bowl of warm hand-made noodles. As long as I have time, I always make hand-made noodles by myself. The hot noodle soup comes quickly and there is no need to stir-fry it. The soup and water are hot and it is really comfortable to eat. It warms the body and stomach and ward off the cold.

Add appropriate amount of water to the flour and mix into a dough, knead until smooth, put it into a basin, cover with plastic wrap and keep aside.

Soak the spinach in light salt water for about 10 minutes, rinse and set aside.

Divide the dough into 3 small doughs, knead them evenly, use a rolling pin to roll them into a long strip, just enough to fit into the noodle machine, and then use the noodle machine to press it into a thin sheet.

Then use a pasta machine to press the dough sheets into noodles. My family usually chooses thin noodles, which is suitable for the appetite of the whole family.

When all the noodles are done, add an appropriate amount of water to the pot, bring the water to a boil and add the noodles. Cooking noodles is also very simple. After boiling, add an appropriate amount of tomato sauce, bring to a boil over high heat and pour cold water. Be careful to stir frequently and don't burn the bottom of the pot. The noodles will be cooked just right the third time.

Here comes the key step. When cooking the noodles, use a separate pan of oil. Peel, wash and chop the green onions. Sauté the peppercorns and throw them away. Saute the chopped green onions until fragrant. Add light soy sauce to taste. The minced garlic tastes better. Pour the sauteed chopped green onion or minced garlic directly into the noodles and it tastes particularly fresh. The onion or garlic aroma is more intense, and it is much more delicious than boiling it in a pot.

After the noodles are cooked, turn off the heat, add spinach, salt, fried scallions, season, and remove from the pan.
