Overview

Steps
-
Wash the purple sweet potatoes, peel off the skin, and steam them in a steamer.
-
Put it into a blender and puree the potatoes. For a blender with a small horsepower, you need to add a little less water. For a blender with a larger horsepower, you can stir directly.
-
Beat into a fine purple sweet potato puree.
-
Purple sweet potato puree is mixed with flour, sugar, and yeast into a dough.
-
Ferment for 45 minutes at room temperature around 25°C. It does not necessarily need to expand twice. Do the basic fermentation first to let the yeast become active. Fermentation will be completed quickly after setting and fermentation again.
-
After the fermentation is basically completed, exhaust the air and knead evenly, roll into strips and divide into small portions.
-
Wrap in cleaned raisins.
-
Rub into small grapes.
-
Take a piece of dough and roll it into a thin sheet, and cut out diamond-shaped pieces to stack the grape dices so that they will not fall apart after steaming.
-
Dip the grapes in some water and arrange them into grape shapes one by one, and ferment again for 15-20 minutes.
-
Steam in the steamer for 10 minutes and take it out.
