It has been my childhood dream. Even Doraemon loves Doraemon's favorite Dorayaki. Whenever I see Doraemon's happy expression while eating Dorayaki, I wonder how delicious it is. I have never thought that Dorayaki can be made at home. I tried it today and I didn’t expect that Dorayaki is so easy to use compared to baking. The dorayaki pancake skin, filled with the rich aroma of honey, is filled with homemade red bean paste. The soft and delicious pancake skin, and the delicate and sweet bean paste perfectly combine to create a mouth-watering snack.

First, sift the low-gluten flour and set aside.

Crack two eggs into the basin.

Add a spoonful of honey and mix well. (Honey is essential for making Dorayaki)

Mix 10 grams of water and baking soda evenly, pour into the egg mixture and stir.

Pour the sifted low-gluten flour into the egg mixture.

Use a rubber spatula to fold evenly into batter.

At this time, the batter is still a little thick, add the remaining 30 grams of water to thin the batter.

The state where the batter can hang down naturally when lifted is the best for making Dorayaki. Let the batter rest for 15 to 30 minutes.

Heat a non-stick frying pan, turn down the heat, and scoop a ladle of batter into the pan. The batter will naturally form a round shape, and the portions of the batter should be as equal as possible. (No need to put oil in the pot)

Heat over low heat until bubbles appear on the surface and are completely solidified, about three minutes, then turn over and continue frying for 3-5 seconds. The fried cake will be brown on one side and light yellow on the other. Be sure to use the lowest heat, be careful as the surface of the pie crust will burn.

Spread the homemade bean paste evenly on the light yellow side, then close it with another pancake.
