Fried rice cake with shepherd's purse
Overview
The shepherd's purse that my mother-in-law picked from the ground is fresh and green, especially after it is blanched in water. It is also a great meal to eat alone at noon, or to fry rice cakes with it.

After washing the shepherd's purse, blanch it in water, rinse it with cold water and squeeze out the excess water. Set aside rice cakes.

Chop the shepherd's purse, cut the rice cake into small strips, and shred the pork.

Put a small amount of oil in the pot, add the shredded pork and fry for a while. After it changes color, add a little soy sauce (you can save it) and a little cooking wine.

Add shepherd's purse and stir-fry for a few times, add a little sugar and an appropriate amount of salt.

Add rice cake and fry for a few times.

Add appropriate amount of water and cook over low heat until the rice cake becomes soft.

Bring to high heat to drain away the water.
