Stir-fried shredded red pepper and chives
Overview
Dried shredded tofu skin is cut into shredded tofu skin, as people here call it, also called Baiye. It is a soy product that can be directly stir-fried with green peppers and red peppers, or stir-fried with leeks, or both. It is a casual and refreshing side dish.

This is a whole tofu skin that can be rolled up and shredded.

Cut into dry slices.

Chop the leeks.

Slice red pepper and garlic slices.

Boil the water, add the dry shreds and blanch. About 10 seconds, then remove the supercooled water.

Heat oil in a pan, add garlic and red pepper shreds and stir-fry over low heat.

Add the leeks and mix quickly.

Add dry shreds and stir well. (It will form clumps, you can use chopsticks to pull them apart)

After stir-frying, add salt and light soy sauce, stir-fry evenly and serve.
