The pig's trotters have been bought and their hair has been burnt and chopped. Blanch. Put it into a pressure cooker, add a small amount of water, and make it level with the pig's knuckles.

Bring the SAIC to a boil over medium-high heat, then reduce to low heat and turn off the heat for 7 minutes.

Use chopsticks to pick out the pressed pork knuckles and let cool. Set aside the soup.

Heat a small amount of oil in the pan.

Add onion, ginger and garlic and stir-fry until fragrant.

Add pork knuckles and stir-fry for half a minute.

Add salt, light soy sauce, dark soy sauce and cooking wine, stir-fry for one minute.

Add boiling water, bring to a boil, then reduce to low heat.

It takes about ten minutes to cook. The soup has dried up.
