Tomato and Egg Pimple Soup

Overview

It feels good to have a bowl of hot pimple soup in winter. Some people like to pinch the pimples with their hands, while others like to wash them out little by little with water. What I used today is the second method. You can either scramble the eggs first or beat the egg droplets. Scrambled eggs will be more fragrant, while the egg droplets will be lighter overall. For three people, a small bowl full of flour is enough.

  1. Wash the tomatoes and cut them into pieces. If you don't like the tomato skin, you can make a cross cut on the top of the whole tomato, then blanch it in boiling water for a few minutes, remove it and cool it in cold water, and the skin will be easy to tear off.

  2. Put an appropriate amount of oil in the pot, add the tomatoes, add an appropriate amount of salt and sugar and stir-fry. Cover the pot and simmer for 1-2 minutes. When the tomatoes become soupy, add an appropriate amount of water and bring to a boil over high heat.

  3. After the water boils, keep it boiling and prepare to make the pimples. I made it for three people today, so the amount is enough to fill a small rice bowl. Pour this amount of flour into a slightly larger bowl, and then pour a little water into it.

  4. Then stir the water with chopsticks to form gnocchi. This kind of dough is of moderate size and soft and hard. I don't like it if it's firmer when I pinch it with my hands. If you can't master this stirring method, it's easier to pour some water, shake the bowl until the water is no longer visible, and then use chopsticks to stir the flour, and you will find that gnocchi have formed.

  5. Then put the formed dough balls into the boiling water and repeat this action. If there are big lumps, just peel them off a little before putting them in the pot.

  6. After everything is done, when the gnocchi are mature and the soup becomes thicker, add the egg droplets and wait until the egg droplets are formed before serving.

  7. After going abroad, you can sprinkle some coriander or chives, or some sesame oil, and add other chili peppers or vinegar to suit your personal taste.
