Cowpea rings stuffed with meat

Thanks to @HIhuahuaer for sharing the recipe. When I saw this recipe for the first time, I immediately saved it. I always wanted to try it, but I have tried it. Let’s eat it with rice! Although it is not as beautiful as @HI Huahuaer, I think it is pretty good. Cowpea, usually I just talk about long beans. Today I went online to learn about cowpea and saw its nutritional value: sweet and mild in taste, good for the stomach and kidneys, contains protein that is easy to digest and absorb, and also contains a variety of vitamins and trace elements. The phospholipids it contains can promote insulin secretion, making it an ideal food for diabetics. My mother-in-law and my father both have high blood sugar. Let them eat more of this in the future!

Boil 9 cowpeas in boiling water.

Soak the cooked cowpeas in cold water for a while.

After soaking in cold water, make the cowpeas into a circle. Make a circle first, and then wrap it tightly inside.

Sprinkle the circled cowpeas with cornstarch.

Soak the minced garlic and ginger in water in advance and use them to prepare the meat filling and the soup.

Add minced meat, mushrooms, quail eggs, an appropriate amount of salt, a spoonful of oyster sauce, a little garlic and ginger water, and stir vigorously in one direction.

After it starts to stir, add an appropriate amount of cornstarch, stir evenly, and the meat filling is completed.

Stuff the meat filling into the cowpea rings, place them one by one directly into the pan, add a little oil and fry over low heat.

Fry until golden brown on both sides.

Add the sauce (ginger/garlic/oyster sauce/water/sugar).

Simmer for a while to collect the juice. It feels like the juice is too dry and there is no juice left in the pot. i

Remove from pan and plate.
