Thousand-layer pancake

Thousand-layer pancake

Overview

Thousand-layer pancake, this cake is simple, crispy on the outside and soft on the inside. It is golden on both sides. It is softer and chewier than spring pancakes. It also goes well with shredded potatoes. Every time you make pancakes, you must stir-fry a plate of shredded potatoes. I feel that this is the taste of spring.

Steps

  1. Knead the dough. When making thousand-layer pancake, put 400g of flour into a basin. Add a little salt to the warm water. Slowly pour the warm water into the flour. Stir all the flour into a flocculent shape without any dry flour. Then knead it into a dough, apply a layer of oil on it, cover it with plastic wrap and let it sit for 15 minutes.

  2. The cooked dough is evenly divided into 5 small doughs. It looks like the dough is still soft and chews well. Take a piece of dough and knead it evenly, roll it into a rectangular shape as much as possible, brush it with a thin layer of oil, sprinkle some salt on it to give it a salty taste, then sprinkle some flour on it, and sprinkle some chopped green onion if you like.

  3. Cut two knives on each side of the rectangle according to the rule of thirds. Make cuts at one-third of the rectangle symmetrically as shown in the picture, then fold both sides to the middle, and then fold back in the middle.

  4. Continue to fold both sides to the middle, then fold back in the middle, and finally fold everything and pinch it tightly. At this point it can be rolled into a round cake. Apply a thin layer of oil to the electric baking pan, put the rolled out pancakes on it, turn on the power, close the top cover of the electric baking pan, and heat it up and down quickly.

  5. However, the pancake is thin and may not be cooked properly. If it feels unsatisfactory, you can flip it over and cook it for another half minute. If you don’t have an electric baking pan, you can use a frying pan and sear both sides over low heat until golden brown.

  6. Take it out of the pan, because the cake is very big, you can cut it into pieces and serve it without cutting it into layers. It is also great to roll into shredded potatoes.
