Keep fresh garlic for later use. When buying, choose the kind that is relatively clean and not damaged.

Carefully cut off the roots. Do not remove the upper stems yet. Clean and dry them.

Cut off the stems, leaving only a short section.

Add brown sugar and salt to the water and bring to a boil. Let cool slightly and add white vinegar.

Clean the container in advance and completely dry the water, then add garlic.

Pour in the cooled marinade to cover the garlic and seal. It will be ready to eat in about a month. (You can taste it every few days and add corresponding seasonings according to your own taste)
