The night before, wash and dry the peanuts (be gentle and try not to damage the peanut skin) ~

Put on a plate, add two egg yolks (or one egg) and mix evenly.

Add two or three tablespoons of cornstarch and coat evenly.

Pour back into the dish and remove excess starch.

Heat the cold oil in the pan, add peanuts, and fry slowly over low heat for about ten minutes.

Fry well, put on a plate and set aside (my fire was a bit too strong, but it was still very fragrant).

In a clean pot, bring a spoonful of water and a spoonful of sugar to a boil over high heat.

The spoon keeps drawing circles around the bottom of the pot, and the big bubbles turn into small bubbles, and the circles continue.

Stir-fry until the sugar aroma develops, and the bottom of the pan turns caramel color.

Add the fried peanuts, turn off the heat and stir evenly.

The grains are distinct, put on a plate and let cool, sweet and crispy~
