Brush the lobster clean and drain the water.

Cut the back and belly along the midline and remove the gills and sand line.

Place on a baking sheet lined with foil.

Place in the middle rack of the preheated oven and bake at 150 degrees for about 8 minutes

Bake until medium rare. The specific time and temperature should be increased or decreased as appropriate based on the actual oven temperature and lobster size.

Chop the minced garlic and onion, add olive oil to the pot, sauté the minced garlic and onion, add a little white wine and stir-fry evenly.

Pour over the lobster and spread the mozzarella cheese evenly over the surface.

Place in the middle rack of the oven, heat up and down to 180 degrees for about 10 minutes, sprinkle a little black pepper and chopped coriander on the surface.
