Cut onions and ginger into shreds, cut off the mustaches from the red shrimps, cut the backs of the shrimps and remove the threads, wash and set aside.

Pour shrimp oil into the pot, add red shrimp and fry until both sides change color. You can gently tap the shrimp head to force out the shrimp oil.

Add onion and ginger and stir-fry until fragrant.

Pour in cooking wine and soy sauce and bring to a boil.

Add 1 small bowl of water, sugar and simmer for about 2-3 minutes, until the soup is almost dry.

Remove from pan and plate.
