Purslane Omelette

Egg fried everything! Ever since I realized this, making fried eggs has become more interesting. All kinds of conventional and unconventional things can almost be related to eggs. Great, average, okay, acceptable, nothing seems particularly unpalatable. When I first saw the purslane, I immediately thought of eggs. It seems like you can already see what it will look like when it's being plated before you even start. Chop it finely, stir into eggs and fry. I am becoming more and more accustomed to making this kind of omelette into a pancake shape, because I can flip the spoon and fry the other side until it turns golden brown. The purslane embedded in the egg, can you still tell it is purslane?
