Peel and slice the yam!

Slice carrots, green peppers, ginger and garlic. Soak dried shiitake mushrooms!

The yam is quickly soaked in water (crispy texture and non-stick)!

Saute the ginger and garlic, add the mushrooms and stir-fry for a minute!

Add carrots and stir-fry!

Add the yam and stir-fry for a while!

Add green pepper and stir-fry, add light soy sauce, stir-fry evenly, and season with salt!

Serve on a plate, crispy and fresh!
