Today's fried rice noodles is a breakfast that I would eat several times every year when I was a kid.

Have all ingredients ready.

Clean and cut the lean meat and pork offal.

Put the chopped lean meat and pork offal on a plate, add appropriate amount of salt, rice wine, peanut oil, shredded ginger and garlic and marinate for 10 minutes.

Heat oil in a pan, pour in the lean meat and pork offal, and stir-fry over high heat.

You can add an appropriate amount of water during the process, or you can make the flour thicker.

Finally add the scallions and season. You don’t need to fry too much. Leave a little more juice and pour the rice noodles on top.

Set aside.

Heat the oil in the same pan, add two garlic cloves and salt and sauté until fragrant. Add two small bowls of water, appropriate amounts of oyster sauce and soy sauce (seasoning in advance is to make the rice noodles taste more evenly).

After the water boils, add the rice noodles that have been rinsed with water, and stir-fry and shake with a spatula and chopsticks.
